Specialist in brewery and beverage analysis

Microbiology meets DNA analysis: PIKA Weihenstephan brings many years of specialist knowledge of microorganisms in breweries and the beverage industry together with the latest methods of DNA analysis. In our laboratory, experienced microbiologists with a technical background are working for you, not only understanding your laboratory operations but also your products and production processes.

You have detected bacteria, yeasts or molds in your sample. Now you want to know which harmful potential is dormant in them, but you have to identify the spoilers first. No problem with our molecular biological analysts and the rapid detection method PCR. With our help you not only get a result, but you always receive a competent assessment. We carry out a diversity of microbiology and DNA analyses for you, please inquire!

The PIKA approach

Our claim is to make you fit for timely detection and assessment of contamination. With our reports, you will always receive additional information in addition to the result. Only then will you be able to optimize your production process. We always work closely with you when choosing the most suitable methods for your research.

In addition to the typical routine examinations such as enrichments, membrane filtration, germ count determination, etc., microorganisms are identified quickly and specifically via PCR analyses and sequencing.

Service-oriented, precise and fast

We know that our results affect your production. Therefore, we always focus on your questions. Each sample is evaluated individually to give you the best possible information. You get your results accurate and fast, your samples are processed on the day of the sample receipt. If you need us, we will be there for you at the weekend.

Established expert knowledge

Our microbiologists are also experts in molecular biology. In addition to routine examinations such as enrichment, membrane filtration or germ count determination, the harmful microorganisms are identified quickly and specifically with modern methods such as PCR analyses and sequencing. The PCR analysis for breweries and beverage industry was developed by us – since 2000 we have been working in the routine.

Specific answers and results

There is a question behind every rehearsal – not only do we deliver results, we also answer the questions. A comparison of findings, the assessment of the harmful potential or instructions for the purification and killing of microorganisms are part of our reports. We also always consider your product and the production environment in the evaluation.

Bacteria analysis

For the investigation on bacteria we offer the conventional methods such as enrichment and microscopic examination (according to EBC, MEBAK and ASBC analysis collections). If necessary, we supplement these with DNA analyses. In PCR analysis, we specialize in the quick detection of beer harmful and drink harmful species. In addition, we also identify isolates from the production environment, just as we quantify E. coli / coliforms. Of course, we can use our analysis spectrum to map the entire bacterial world.

Yeast analysis

We identify harmful yeasts using modern methods and identify them. In addition to selective enrichment, PCR systems from our own development are used. We also provide precise information when identifying unknown yeast isolates or when comparing contaminants from different areas or different time periods. Are yeasts fermentable or not? What is the risk for a bombage? Can the yeasts multiply rapidly in the product? We clarify these questions for you so that you can react purposefully in the process and take appropriate measures.

Analysis spectrum:

  • Yeast evidence
  • Differentiation of top-fermented bottom-fermented yeasts
  • Differentiation of foreign yeasts
  • Raffinose fermentation of brewer’s yeasts according to MEBAK
  • Identification of yeasts
  • Quick reference of wild yeasts Brettanomyces (Dekkera),
  • S. cerevisiae var. Diastaticus

  • Sugary sodas and fruit drinks
  • Juice and spritzer
  • Wine, sparkling wine and cider
  • Beer and mixed beer drinks
  • Fruit concentrate, fruit pulp, pulp

Mold analysis

Mold isolates are identified by DNA sequencing within 3 to 4 days. The detection of Fusarium species with PCR takes only 3 hours. We help you to answer important questions such as: Where do the molds come from? Do they make mycotoxins? Are they harmful to your health? How can I improve the process to avoid future contamination? We not only provide you with a result, but also advise you on further steps.

Enumeration

The determination of the number of bacteria takes place depending on the sample type and the aim of the analysis with different procedures. As far as possible, we comply with the current DIN regulations. You do not have any suitable material for sampling or you need training on how to best take the sample? We support you with all questions and find the best solution together with you.
